Fishbone feels a little like an American diner, but decked out in blues and greens instead of reds and silvers. Rows of light wooden and leather booths line the walls opposite the kitchen, so you can see your Moby Dick cooking on the grill.
The menu is deliberately simple, letting the fish take centre stage instead of dressing it up in fluff it doesn't need. The fish is sourced direct from the fisherman of the South Island, and delivered into the restaurant fresh every morning before service.
For entree, the Fish Tacos are legendary, but leave room for your main, as the fish are ocean giants and might defeat even the heartiest appetite. The Blue Cod is crusted in parmesan, the crayfish and lobster come straight from the tank (pick whichever one looks meanest), and the fish burger is meaty and topped with the house tartare sauce.
Most items are gluten-free and there are still vegetarian options, even for a fish restaurant like this. It's a fun place, and you'll never look at fish and chips in quite the same way again.
